WINEMAKER TASTING NOTES
In outstanding years such as 1997, the ultimate quality of a wine is apparent even before the fruit has been harvested. Our Cabernet Sauvignon from 1997 is a fine example of an exceptional vineyard in an outstanding vintage.
Harvested, at the ideal maturity, the grapes were dark and sweet, with an intense and concentrated flavor. The wine was fermented in stainless steel tanks, then pressed and put directly into French oak barrels, where it remained for 27 months. Although a very dark color is the norm for the Staglin Family Vineyard, the ‘97 Cabernet shows a purple-black hue, with aromas and flavors also showing the rich ripe vineyard character. Black cherries, blackberries, cassis and hints of spice and tarragon all combine in a structure that supports this full-bodied wine.
This is clearly a powerful wine with a tremendous potential for aging.
